Yummy Pumpkin Cookies - Learn How To Make these delightful baked cookies for Halloween

Pumpkins aren't just for carving jack-o-lanterns, or for pumpkin pie either. How about cookies? Have you ever tried or made pumpkin cookies? I found this tasty option for all you pumpkin lovers out there. Watch the video. The recipe will follow below......
Delicious pumpkin cookies that are soft and have a cake-like texture! Great for Halloween parties!


1 cup butter, room temperature
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 cup canned pumpkin
1 egg
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
cream cheese frosting
sprinkles for decorating (optional)


Preheat oven to 350 degrees.
In a large bowl, cream together butter, sugar and brown sugar.
Then add the pumpkin, egg and vanilla extract.
Mix until well combined.
In another bowl, add flour, baking soda, baking powder, cinnamon and salt.
Stir well.
Add flour mixture to the butter-sugar mixture and mix well.
Drop mixture by tablespoon onto un-greased cookie sheets.
Cookies should be about 3 inches apart.
Bake in oven for 10 - 12 minutes or until edges are golden.
Remove from oven and place on racks to cool.
Once cookies are completely cool, top with cream cheese frosting and decorate with sprinkles.
